Italina Pizza Oven Roasted Chicken and Potatoes

  • Olive oil
  • Lemons
  • Garlic
  • Spices (Italian seasoning, onion powder, thyme, paprika, red pepper flakes)
  • Chicken thighs (bone-in, skin-on)
  • Potatoes
  • Onion
  • Parsley for garnish


Preheat your Italina pizza oven for about 45 minutes

In a mixing bowl, combine olive oil with lemon zest, lemon juice, garlic, Italian seasoning, onion powder, thyme, paprika, and red pepper flakes.

  • Toss with Chicken in a large bowl, place your chicken thighs, potatoes, and onions. Pour the prepared seasoning mixture over them, and add salt and pepper to taste. Thoroughly toss everything together. It’s best to use your hands for this step to ensure even coating.
  • Arrange the seasoned chicken, potatoes, and onions on a pizza oven-safe pan. Before placing it in the pizza oven, give the chicken an additional light seasoning of salt to ensure it’s well seasoned all over.
  • Cover the pan with aluminum foil and place it in the preheated Italina pizza oven. Roast for about 40 minutes.
  • After the initial 40 minutes, uncover the pan, toss the potatoes around, and spoon some of the pan juices over the chicken for added flavor.
  • Place lemon slices on top of the chicken and continue baking, uncovered, in your pizza oven for an additional 25-30 minutes, or until the chicken is fully cooked, and the potatoes are tender.
  • Allow the roasted dish to rest for 5-10 minutes before serving. Garnish with fresh parsley.
